Johns Hopkins University student Emily Hu got tired of eating in the campus dining hall. As a public health student, she was also interested in nutrition. So she learned to cook, embracing the limitations of dorm room cooking and finding creative solutions. Now she’s blogging about her experiences, and teaching others to cook.

NPR reports:

“You can make basically anything you can imagine using just the microwave and toaster oven,” she says. Her blog features recipes for microwavable goods like Nutella chocolate cake. And Hu has relied on her trusty toaster oven to make everything from gourmet pizza to single-serving apple crumble.

Even you have access to a full kitchen, you’ll want to read Hu’s blog and try the recipes. A delightful read.
